The King of Fighters '98 Ultimate Match

The King of Fighters '98: Ultimate Match is SNK's 2008 overhaul of the dream-match classic, a rebalanced version of KOF '98 that pushes the roster to 64 fighters, including ten faces who never made the original cut. The Ultimate fighting mode lets you mix and match Advanced and Extra rules across movement, evasion, and meter, which is exactly the kind of toggle the tournament scene had been asking for. The Neo Geo original ships on the disc too.

Five modes cover the bases: Arcade, Single Play without teams, an Endless endurance gauntlet, Practice, and Challenge. Sprite scaling, smoothing filters, and a 2D or 3D background switch let you tune the look. Decades after release, '98 UM still shows up at majors as the purest 3-on-3 arcade KOF, and it is the easiest way for new players to get into the era's footsies-heavy combo style.
